Create an open-world game in which one is given (simplified and idealized) surveying tools to manually map the game world by measuring things. Later the map you've created could be tested for accuracy, perhaps in a challenge like Hunt for Red October's high-speed blind maneuverings through underwater canyons.
Later in the game, one can no longer approximate the world as flat, but need to model it as a sphere. Then even later, sphere is not accurate enough: oblate ellipsoid.
