The blonde joke ends with the punch line, "But if it's mostly sugar, why does it taste salty?"

Sadly, that question never gets answered properly.  I suspect the answer is because most of the sugar is glucose, which is not very sweet, and the tongue's taste receptors for salt are much more sensitive than for sweet, so the salty taste dominates even though the quantity is much less.
