Create a twisty puzzle (e.g., Rubik's Cube) which can record the sequence of moves you tried, including timestamps.  Probably easiest is for the puzzle to emit sound or radio for each move, and a separate nearby receiver connected to a computer records and transcribes the emissions.  Let the emitter be powered by the movement of the puzzle.

Speedcubers move faster than typical video recording frame rates.
