Touch Pianist by Batuhan Bozkurt is a pretty neat piano application. Some features I would add:
Velocity sensitivity for loudness: this requires the input device that has that ability, e.g., an electronic musical keyboard.
Pedaling.
Along with velocity sensitivity, two hands independently controlling the loudness of each hand.
Rapid passages played by interpolation in time rather than having to hit each key.
Add phantom notes that don't play anything, but help establish the tempo for interpolation.
Rapid passages controlled by an analog input, e.g., sliding.
Visuals more closer to music notation.
Ability to decide on the fly to repeat or skip sections, or jump to a marker.
No visuals for playing from memory.
Karaoke mode: play with an accompaniment. This requires interpolation.
Edit the output (already exists via output to MIDI).
