Hover the mouse over option categories arranged in a ring around the edge of the display. Edge is good for Fitts's Law. Perhaps some hierarchical color coding to help remember if the "buttons" are too small for labels to carry enough information. Each option category causes options to be revealed in the center of the display which are selected using the keyboard, with keys on one side of they keyboard only (because the other hand is on the mouse).
Possibly key sequences which are easy to type. 3*4*4=48 if two keys from each row. Space bar is backspace.
