One of the nice benefits of resolving draws in chess with blitz games is conventional wisdom thinks it is harder to cheat at blitz. If a top-level player regularly plays significantly worse at blitz, this should raise suspicions. Of course, if a top-level player is currently cheating at classic time controls, he or she would oppose adding blitz, because then the sham is up.
There would be fewer disputes if blitz games get played over an electronic interface (i.e., with a display and mouse), but it also makes it easier to cheat, since a computer could get access to moves more quickly and reliably than an electronic board, and a sneaky program installed on the display could communicate assistance. Maybe this is the reason not to use electronic boards at all for blitz games. The game score sheet can be resolved by video afterwards.
