The rook is represented as a square because it moves orthogonally.

The knight is a horizontal line, or wide rectangle because the torso of a horse viewed from the side is a wide rectangle.

The bishop is a vertical line because the physical chess piece is tall and thin.

The queen is a diamond because diamonds are a girl's best friend.

The king is a cross because the piece always has a cross on the crown.

The pawn is a circle.

Consider a tabletop touchscreen display for chess, with the players seated across from each other.  We need symbols for the pieces which look the same if viewed right side up or flipped 180 degrees upside down.
